摘要
根据国内文献综合统计,我国双峰驼乳脂肪、蛋白质、乳糖含量为(5.58±1.21)g/100 g、(3.96±0.46)g/100 g、(4.99±0.68)g/100 g,是荷斯坦牛乳的1.45倍、1.23倍、1.02倍;总乳固体、非脂乳固体含量为(15.40±1.32)g/100 g、(9.82±0.89)g/100 g,比荷斯坦牛乳高21.64％、11.46％.本文结合我国驼乳标准现状,建议双峰驼生驼乳国家标准中宏量营养素含量要求设定为:脂肪≥3.5 g/100 g、蛋白质≥3.3 g/100 g、非脂乳固体≥8.5 g/100 g.
Abstract
According to comprehensive statistics of domestic literature,the contents of fat,protein and lactose in bactrian camel milk in China were(5.58±1.21)g/100 g,(3.96±0.46)g/100 g and(4.99±0.68)g/100 g,which were 1.45 times,1.23 times,and 1.02 times of Holstein milk.The contents of total milk solids and non-fat milk solids were(15.40±1.32)g/100 g and (9.82±0.89)g/100 g,which were 21.64％ and 11.46％ higher than those of Holstein milk.Based on the current status of camel milk standards in China,this paper suggested that the macronutrient content requirements for raw camel milk from bactrian camels should be set as follows:fat ≥ 3.5 g/100 g,protein ≥ 3.3 g/100 g,and non fat milk solids ≥ 8.5 g/100 g.
