乳中富含乳脂肪,是人类摄入脂肪酸的重要来源.研究表明,人类心血管疾病、癌症等的发生与摄入的脂肪酸组成密切相关.而乳中含有较高的饱和脂肪酸,ω-6/ω-3多不饱和脂肪酸(PUFA)比值较高,脂肪酸组成并未达到最优,这也是乳品消费的争议所在.随着人们健康意识的提升,消费者更加注重脂肪酸的平衡营养.基于此,本文从全产业链的角度总结了在营养、遗传、基因工程以及生产加工工艺等方面进行ω-3 PUFA富集型乳品开发的相关成果,以期为后续研究提供参考依据.
Research Progress of ω-3 Polyunsaturated Fatty Acid Enriched Dairy Production
Milk is rich in milk fat,which is an important source of human intake of fatty acids.Studies have shown that the occurrence of cardiovascular diseases and cancers in humans is highly correlated with the composition of fatty acid consumed.While milk contains high saturated fatty acid and ω-6/ω-3 polyunsaturated fatty acid (PUFA)ratio,the fatty acid composition is not optimal,which is the controversy of dairy consumption.With the improvement of people's awareness of health,consumers pay more attention to the balanced nutrition of fatty acids.Based on this,this paper summarized the relevant achievements in the development of ω-3 PUFA enriched dairy products in the aspects of nutrition,genetics,genetic engineering and production and processing technology from the perspective of the whole industry chain,aiming to provide reference for subsequent research.
