The aim of this study is to investigate the effects of adding cellulase(CEL)to feed on the growth performance,serum biochemical indicators,and meat quality of Kangxian Taiping chickens.600 1-day-old male Taiping chickens from Kang County were randomly divided into 4 groups,each consisting of 10 replicates and a total of 150 chickens.The experiment was conducted in three stages:0~21 days,22~42 days,and 43~105 days.CEL at doses of 0,60,120,and 240 mg/kg was added to the basic diet of each stage as the experimental feed.The results showed that compared with the control group,the CEL groups at 120 and 240 mg/kg significantly increased the final weight of Taiping chickens by 4.74%and 4.95%,respectively(P<0.05),significantly increased the average daily weight gain by 4.91%and 5.11%,respectively(P<0.05),and significantly decreased the feed to meat ratio by 3.83%and 5.12%,respectively(P<0.05).In addition,CEL had no significant effect on the feed intake of Taiping chickens(P>0.05).The serum GLU and MDA levels of Taiping chickens in the CEL group at 240 mg/kg were significantly reduced(P<0.05),and the T-SOD ability was significantly improved(P<0.05).The serum GH and INS levels of Taiping chickens in the CEL groups at 120 and 240 mg/kg were significantly increased(P<0.05).CEL had no significant effect on the serum TG,TC,IGF-I levels,ALT and AST activity of Taiping chickens(P>0.05).The L * value and crude fat content of Taiping chicken breast muscle in the CEL group at 240 mg/kg were significantly increased(P<0.05),and the shear force was significantly reduced(P<0.05);The a* value of Taiping chicken breast muscle was significantly increased in the CEL groups at 120 and 240 mg/kg(P<0.05).CEL had no significant effect on b* value,pH value,and crude protein content(P>0.05).Conclusion:Adding cellulase can improve the growth performance and meat quality of Taiping chickens.Taking into account various detection indicators,the optimal dose is 240 mg/kg.
