水产品中孔雀石绿快速检测方法研究进展

摘要
孔雀石绿是一种人工合成的三苯甲烷类化合物,曾广泛应用于水产养殖过程中.但水产品中的孔雀石绿残留会对人体健康造成极大危害,因此,美国、欧盟以及中国都出台了相关法律法规,禁止孔雀石绿用于水产养殖中,且在食品中不得检出.因此,建立快速便捷的水产品中孔雀石绿检测方法对保障食品安全具有重要作用.本文针对目前孔雀石绿的快速检测方法进行了综述,并按照各种方法的原理进行分类,主要包括表面增强拉曼法、电化学法、比色法、荧光法等,并对各种方法的优缺点以及检测效果进行了分析比较,以期为建立精准快速测定各个体系中孔雀石绿残留含量的方法提供参考.
Abstract
Malachite Green (MG),a synthetic triphenylmethane compound,has been widely used in aquaculture despite its known harm to human health. Its use in aquatic products is banned in the United States,European Union,and China,where regulations prohibit its use and it should not be detectable in food. Therefore,it is very important to establish a rapid and convenient method to detect MG in aquatic products to ensure food safety. This paper reviewed the current rapid detection methods for MG,classifying them according to their detecting principles which include surface-enhanced Raman spectroscopy,electrochemistry,colorimetry,and fluorescence. The advantages and disadvantages and detection efficacy of each method were compared. The study provides a valuable reference for establishing accurate and rapid determination of MG residues in various systems.
