摘要

目的:研究紫苏叶花色苷的抗氧化作用.方法:以TBHQ、VC、紫苏叶水提物作对照,通过铁离子还原/抗氧化能力测定,清除·DPPH自由基和ABTS+自由基试验以及抗氧化能力指数的测定,研究紫苏叶花色苷的抗氧化活性.结果:紫苏叶花色苷具有较强的铁离子还原/抗氧化能力,对·DPPH自由基和ABTS+自由基均有良好的清除作用,能够通过抑制氢转移反应过程终止自由基链式反应.结论:紫苏叶花色苷具有良好的抗氧化能力,其抗氧化性随浓度的增大而增强.紫苏叶花色苷有望作为天然抗氧化剂及功能性食品得到开发利用.

Abstract

Objective: To study on the antioxidant action of anthocyanins from leaves of Perilla frutescens. Method: Compared with TBHQ, VC and water extracts from leaves of Perilla frutescens, the antioxidant activity of anthocyanins from leaves of Perilla frutescens was studied by measuring its ferric reducing/antioxidant power, scavenging effects on ·DPPH radical and ABTS+ radical, oxygen radical absorbance capacity. Results: The anthocyanins from leaves of Perilla frutescens not only had strong ferric reducing/antioxidant power and scavenging capacity on ·DPPH radical and ABTS+ radical, but also had a significant oxygen radical absorbanee capacity. Conclusion: The anthocyanins from leaves of Perilla frutescens had a strong antioxidant ability and its antioxidant activity is concentration dependent, it is promising to be developed and applied as a natural antioxidant and functional food.
