食品功能因子靶向运载体系及其在食品中的应用

随着对功能食品中最重要的成分——功能因子研究的深入,大量的功能因子被开发应用到功能食品中.例如不饱和脂肪酸、多酚及类胡萝卜素等,因其特殊的理化性质,使自身的生物利用率低下,从而制约了其在食品中的应用.开发食品功能因子运载系统,提高其在生物体中的利用率便成为亟需解决的问题.本文以近几年食品功能因子运载体系研究为基础,系统归纳纳米乳状液、多层乳状液、固相脂质颗粒与凝胶颗粒的理化特性,阐述多种输送体系的作用机理和应用领域,提出针对功能因子易氧化、稳定性差和生物利用率低等问题,应建立靶向运送体系,改善功能因子,实现体内的靶向作用位点控制释放.
Target Delivery System of Food Functional Factors and Its Application in Food
With the continuous research on functional factors,the essential components in functional foods,numerous functional factors have been developed and applied to functional foods.For instance,unsaturated fatty acids,polyphenols and carotenoids have their own low bioavailability due to their special physicochemical properties,thus restricting their application in food.Therefore,the development of functional factor transport systems to improve the utilization of func-tional factors in food organisms has become an urgent problem to be solved.In this paper,we systematically summarize the physicochemical properties of nanoemulsions,multilayer emulsions,solid-phase lipid particles,and gel particles based on recent research on functional factor delivery systems and explain the mechanism of action and application of various delivery systems.The target delivery system could help improve functional factors'problems and achieve the con-trolled release of targeted action sites in vivo.Conclusively,this paper aims to lay a theoretical basis for developing and applying targeted delivery systems for functional factors in the food industry.
