摘要
动物源性食品中农药残留日益受到关注,已经成为影响动物源性食品质量安全的主要风险因子之一.当前,我国基于动物源性食品中农药残留试验数据开展的膳食暴露评估和最大残留限量研究相对较少.因此,加强动物源性食品中农药残留风险监测与研究,构建农药残留监控体系,并基于大数据分析形成风险预警,及时分析研判暴露风险高的农药,制定检测标准与限量标准,有助于提升监管水平,保障公众食品安全.本文探讨了动物源性食品中农药残留的来源途径、检测标准概况、限量制定,并提出了监控建议,旨在为动物源性食品中农药残留监控提供参考.
Abstract
Pesticide residues in animal-derived food have increasingly attracted attention and have become one of the main risk factors affecting the quality and safety of the food.At present,dietary exposure assessments and studies on maximum residue limits based on pesticide residues in animal-derived food are relatively scarce in China.Therefore,it is necessary to strengthen the monitoring and research on pesticide residue risks in animal-derived food,establish a pesticide residue monitoring system,and utilize big data analysis for risk warning.This includes timely analysis and assessment of high-risk exposures,formulation of detection and limit standards,and overall improvement of regulatory oversight to ensure public food safety.This paper discusses the sources,detection standards,limit settings,and monitoring suggestions for pesticide residues in animal-derived food,aiming to provide references for the control of these residues.
