智慧化营养健康食堂的发展与实践

目的:介绍营养健康理论和人工智能、物联网等信息技术在现代食堂中的应用,为食堂场景下的健康促进模式提供进一步发展思路。方法:通过文献检索和实地调研,对营养健康食堂和智慧食堂的国内外发展现状进行综述,结合国内典型智慧化营养健康食堂实践案例进行深入分析。结果:智慧化营养健康食堂可提高食堂管理水平,实现数字化膳食记录,促进个性化健康管理。结论:提出智慧化营养健康食堂发展的建议,包括组织单位支持与保障、营养人才队伍建设、菜肴开发和标准化菜肴库建设、菜肴营养评价体系建设、食堂特色的健康管理和健康宣教、数据有效利用和创新研究。
Development and Practice of Intelligent Nutritional and Healthy Canteen
[Objective]To introduce the application of nutrition and health theory,artificial intelligence,the Internet of Things,and other forms of information technology that are applied in modern canteens,with an expectation of providing further ideas for the develop-ment of the health promotion mode in the context of canteens.[Method]Through literature search and field investigation,the development status of nutritional and healthy canteens and intelligent canteens both domestically and abroad was reviewed,and detailed analysis was conducted together with an investigation of typical practical cases relating to intelligent nutritional and healthy canteens.[Result]Intel-ligent nutritional and healthy canteens are able to improve the management level of canteens,facilitate the realization of digital meal records,and help with the promotion of personalized health management.[Conclusion]Suggestions for intelligent nutritional and healthy canteen development are proposed,which include organizational unit support and guarantee,the creation of nutrition talent teams,the development of dishes and the creation of a standardized dish library,the creation of a dish nutrition evaluation system,a focus on the canteen characteristics of health management and health education,and the effective use of data and innovative research.
