Comparative Study on Monascus Pigment Produced by Monascus Fermentation with Different Concentrations of Shrimp Shell Powder with Different Inoculation Amounts
[Objective]The discharge of crawfish shell waste causes environmental pollution and resource waste.In order to optimize the production process of Monascus pigment,Monascus can transform and utilize the protein of crawfish shell.[Method]The protein from crawfish shell waste was used as the sole nitrogen source to conduct liquid fermentation with Monascus GN01.The effects of different inoculum sizes on Monascus and citrinin production by Monascus were investigated,and the production process of low citrinin and high Monascus pigment was obtained.[Result]The fermentation broth containing 0.5%shrimp shell powder had the highest color value of 10 U/mL and the content of citrinin was 0.004 mg/L under the condition of 5%inoculum.When the amount of shrimp shell powder was 1.1%,the fermentation broth had the highest monyeast red pigment value of 49.75 U/mL under 10%inoculum.The content of citrinin was 0.032 mg/L.[Conclusion]In actual production,the appropriate inoculation amount should be selected according to different purposes,and the preliminary technological parameters of crawfish shell fermentation by Monascus were determined.
