噬菌体内溶素在食品中的应用进展

摘要
耐药性细菌毒株的出现给食品安全领域带来严重的威胁及挑战.噬菌体内溶素是双链DNA噬菌体在复制后期产生的一种水解酶,可以裂解细菌细胞壁的肽聚糖成分.在控制食源性致病菌时噬菌体内溶素的应用不仅安全、无残留,而且不易产生抗性.系统介绍了噬菌体内溶素的相关结构特点及裂解过程,综述了噬菌体内溶素在控制食源性致病菌污染方面最新的研究进展及应用情况,并对未来在食品安全方面的应用进行了展望.
Abstract
The emergence of drug-resistant bacteria has brought serious threats and challenges to food safety.Phage endolysin,which can lyse peptidoglycan component of bacterial cell wall,is a kind of hydrolase produced by double-stranded DNA phage in the late replication period.Endolysin applica-tion is safe and residual-free,and hardly to gain resistance in the prevention and control of food-borne pathogens.The relevant structural characteristics and lyse process of phage endolysin were systematically introduced,and the latest research progress and application of phage endolysin in the prevention and control of food-borne pathogens were summarized,and the future application in food safety was prospected.
