Objective:To improve the utilization rate of wild jujube flesh,deep eutectic solvent(DES)was used to extract polysaccharides from wild jujube flesh(WJFP)and optimize the extraction pro-cess.The α-glucosidase inhibitory activity of the polysaccharides was also determined.Methods:The optimal extraction process was explored through single factor and response surface experiments.The monosaccharide composition was determined by HPAEC,and the α-glucosidase inhibitory activity of WJFP was measured.Results:The optimal DES system was choline chloride-urea(CCU)with a mo-lar ratio of 1∶2.The optimal extraction process parameters were as follows:ultrasonic time of 62 min,ultrasonic temperature of 54℃,moisture content of 24%,and solid-liquid ratio of 1∶20(g·mL-1).Under these conditions,the yield of WJFP reached 5.57%.Analysis of WJFP monosaccha-ride composition showed that arabinose and galacturonic acid were the main monosaccharides in the polysaccharides.The α-glucosidase inhibition activity of WJFP at a concentration of 0.2 mg·mL-1 reached 82.05%.Conclusion:Polysaccharides extracted using DES from wild jujube flesh exhibited significant α-glucosidase inhibitory activity,expanding the development prospects of wild jujube flesh.
