摘要

对引种至宜宾地区的10个茶树品种的生理指标、主要生化成分含量及所制成茶感官品质表现进行了研究.生理指标调查表明,10个茶树品种在宜宾地区具有较强适应性,其中天府茶28号、春雨1号、巴渝特早、中茶102、黔茶8号、湘波绿2号春季萌发时间早.生化成分含量检测结果表明,各品种生化成分含量各有差异,其中黔湄601、湘波绿2号、槠叶齐、天府茶28号氨基酸总量均在5%以上,具备制优质绿茶的生化特点.感官品质结果表明,槠叶齐、湘波绿2号、天府茶28号制宜宾早茶和川红工夫品质表现优异,中茶111、春雨1号和黔茶8号制宜宾早茶品质更突出,鄂茶1号、黔湄601制川红工夫品质更独特,而中茶102和巴渝特早制茶香气表现较优.10个品种制茶品质表现存在差异,为适制宜宾早茶和川红工夫的茶树良种提供了多种选择.相关性分析结果表明,所制成茶感官审评总分与茶多酚、咖啡碱、氨基酸含量呈正相关.研究通过多角度分析,为适制宜宾早茶和川红工夫的良种选择提供了理论依据,有助于推动宜宾茶产业高质量发展.

Abstract

The physiological indexes,main biochemical components and sensory qualities of ten tea cultivars in Yibin area were studied.The physiological index investigations show that ten tea cultivars had strong adaptability in Yibin area,and Tianfucha 28,Chunyu 1,Bayu Tezao,Zhongcha 102,Qiancha 8 and Xiangbolü 2 sprouted early in spring.The results of biochemical content test show that there were differences in the biochemical content of each cultivar.Among them,the total amino acid contents of Qianmei 601,Xiangbolü 2,Zhuyeqi,and Tianfucha 28 were above 5%,which had the biochemical characteristics of making high quality green tea.The sensory quality results show that Zhuyeqi,Xiangbolü 2 and Tianfucha 28 all exhibited excellent quality characteristics in producing both Yibin Earliest Tea and ChuanHong Gongfu.Zhongcha 111,Chunyu 1 and Qiancha 8 had outstanding quality characteristics in producing Yibin Earliest Tea.E'cha 1 and Qianmei 601 had a unique quality in producing ChuanHong Gongfu.While Zhongcha 102 and Bayu Tezao had a better aroma in producing tea.There were different sensory qualities of tea produced by ten tea cultivars,providing multiple choices for the tea cultivars suitable for Yibin Earliest Tea and ChuanHong Gongfu.The correlation analysis shows that the total score of sensory evaluation was positively correlated with tea polyphenols,caffeine,and amino acids.The study provided theoretical basis for the breeding of good cultivars suitable for Yibin Early Tea and ChuanHong Goufu,and helped promote the high-quality development of Yibin tea industry.
