Progress in the Application of High Performance Liquid Chromatography in the Detection of Organic Acids in Tea
Organic acids are the main components affecting tea aroma and taste.High performance liquid chromatography is a commonly used method for detecting organic acids in food,which has the characteristics of simple operation,high sensitivity,and good separation effect.The article reviewed the effects of organic acids on the flavor and quality of tea,the types of organic acids that could be determined in tea using high-performance liquid chromatography,as well as relative research progress.It summarized the conditions for determining organic acids in tea using high performance liquid chromatography,including the selection of detection wavelength,mobile phase,flow rate,and column temperature.The difficulties in using high performance liquid chromatography to determine organic acids in tea and the application prospects of the method were discussed,in order to promote the development of organic acid detection technology in tea.This paper provided guidance for the study of quality characteristics and health benefits of tea,and provided a reference for the formulation of detection method standards for organic acid components in tea.
