This paper systematically summarized the current situation of white tea production in China in recent years,analyzed the main problems existing in the current white tea processing from the aspects of processing principle,processing technology and equipment,compared and analyzed the advantages and disadvantages of different processing technologies and equipments,and proposed that the development of white tea processing and equipment should move towards the standardization and refinement of processing process and the direction of intelligent production equipment,which provided a reference for the high-quality development of white tea industry.
