Canonical Correlation Analysis of Body Size Traits,Carcass Traits and Meat Quality Traits of Zhangye Beef Cattle before Slaughter
The purpose of this experiment was to reveal the relationship between body size traits,carcass traits,and meat quality traits of Zhangye beef cattle.Simple correlation analysis and canonical correlation analysis were used to analyze 24 variables of three groups of traits.The results of simple correlation analysis showed that pre-slaughter weight,carcass weight,and net meat weight were significantly positively correlated with body height,cross height,body length,chest circumference,abdominal circum-ference,and cannon circumference(P<0.05).There was a significant positive correlation between eye muscle area chest circumfer-ence and slaughter rate(P<0.01).And a significant negative correlation between eye muscle area and meat-bone ratio,carcass meat yield,muscle color,and water-holding capacity(P<0.01).The results of canonical correlation analysis showed that the first canonical correlation coefficient between body size traits and carcass traits was significantly correlated(P<0.05).The first canoni-cal correlation coefficient between body size traits and meat quality traits reached a significant level(P<0.01).The first canonical correlation coefficient between carcass traits and meat quality traits reached a considerable level(P<0.01).The correlation between the first pair of canonical variables of body size traits and carcass traits was caused by the correlation between cannon circumfer-ence(X6)and carcass weight(Y2),and the correlation between the second pair of canonical variables was mainly caused by cannon circumference(X6)and net meat weight(Y4).The correlation between the first pair of canonical variables of body size traits and meat quality traits was caused by the correlation between body height(X1)and shear force(Z3).The correlation between the second pair of canonical variables was mainly caused by circumference(X6)and crude protein(Z7).The correlation between the first pair of canonical variables of carcass traits and meat quality traits was caused by the correlation between carcass meat yield(Y8)and cook-ing loss(Z10).The correlation between the second pair of canonical variables was mainly caused by net meat weight(Y4)and eye muscle area(Z6).It can be seen that body size traits can better predict some carcass traits and meat quality traits,and accelerate the breeding process of new beef cattle varieties.
