Comparison of the Effects of Sex on Carcass Performance and Meat Quality of Wulian Black Pigs
To study the effect of sex on carcass performance and meat quality,a total of 20 Wulian black pigs,including ten castrated boars and ten sows with body weight 100 kg,were slaughtered.The results showed that effect of sex on carcass performance and con-tent of fatty acid in longissimus muscle were not significantly,on L value,shear force,and methionine,leucine,tyrosine,lysine,content of delicious,percentage of delicious amino acid counted for total amino acid were significantly.Meanwhile,compared with the castrated boars,L value of sows increased by 9.97%(P<0.01),shear force decreased by 31.05%(P<0.01),methionine and tyrosine in-creased by 61.29%(P<0.05)and 18.95%(P<0.01),respectively.Leucine,lysine,content of delicious,percentage of delicious amino acid counted for total amino acid of castrated boars increased by 11.88%(P<0.05)、80.73%(P<0.05)、11.16%(P<0.05)、7.38%(P<0.05)compared with sows,respectively.It explained that the gender had a significant impact on the partial amino acid content of Wulian black pork and had a certain impact on the quality of pork.
