Nutritional Composition Analysis of Geloina coaxans from Various Regions of the Beibu Gulf,Guangxi
[Objective]To understand the differences in nutritional composition of Geloina coaxans in different areas in the Beibu Gulf of Guangxi,to provide data for the breeding and selection breeding of G.coaxans.[Method]By means of biochemical analysis,the contents of conventional nutrients,amino acids and fatty acids were measured,and the quality evaluation was conducted.[Result]The findings indicate that in terms of conventional nutrients,the soft tissues of G.coaxans from Fangchenggang exhibited the highest water content,while those from Beihai had the highest levels of total sugar and ash(P<0.05),with crude fat content being lower than that of the clams from Qinzhou(P<0.05).Amino acid analysis revealed the presence of 15 different amino acids in the soft tissues of the clams from all three regions.The ratios of total essential amino acids mass to total amino acids mass(mEAA/mTAA)and total essential amino acids mass to total non-essential amino acids mass(mEAA/mNEAA)ranged from 27.55%to 28.22%and from 46.28%to 48.23%,respectively,which are relatively low but well-balanced.The flavor-enhancing amino acid content to total amino acid content ratio(mFAA/mTAA)was between 45.85%and 46.35%,and the essential amino acid index(EAAI)ranged from 53.19 to 86.13,with the soft tissues of the clams from Fangchenggang showing the highest levels of mTAA(P<0.05),mEAA(P<0.05),mFAA(P<0.05),and EAAI.In terms of fatty acid composition,a total of 26 fatty acids were identified,including 9 saturated fatty acids(SFA),7 monounsaturated fatty acids(MUFA),and 10 polyunsaturated fatty acids(PUFA),with higher levels of eicosapentaenoic acid(EPA)and docosahexaenoic acid(DHA)found in the soft tissues of the clams from Fangchenggang and Qinzhou.[Conclusion]The Beihai G.coaxans exhibit high protein and low fat nutrition,and may have better palatability,while the Fangchenggang G.coaxans group has a higher essential amino acid balance,which can better meet the needs of essential amino acids.The G.coaxans from Beihai,Fangchenggang,and Qinzhou in Guangxi are high in protein content,low in fat,and well-balanced in nutrition,making them high-quality shellfish.They contain a variety of amino acids with a reasonable composition ratio,including a rich content of essential and flavor-enhancing amino acids,which can be studied as a natural seasoning resource.They are rich in monounsaturated and polyunsaturated fatty acids,and can be used as a nutritional food ingredient rich in fatty acids.Among the three populations,the G.coaxans from Fangchenggang have a higher protein nutritional value and better amino acid balance,which can better meet the human body's demand for essential amino acids.
