摘要

核桃是一种重要的经济作物,含有丰富的营养成分,具有开发药食同源产品的潜力.本文综述了核桃仁及其副产物的营养成分、功能特性和开发利用.核桃仁作为核桃的主要食用部位,富含脂肪酸、蛋白质、碳水化合物、矿物质和维生素等多种有效成分,可用于开发抗癌、减肥、美容等产品.核桃深加工中的副产物如核桃分心木、核桃青皮、核桃叶含有多种化学成分,如胡桃醌、多糖、酚类等,可应用于开发杀虫剂、生物质炭、降血压药等产品.此外,本文列举了一些较成熟的核桃产品如核桃蛋白粉、分心木酒和核桃油胶囊,以促进中国核桃产业链的发展.

Abstract

Walnut is an important economic crop with rich nutritional components,demonstrating the potential for de-veloping medicinal and edible products.This paper reviews the nutritional composition,functional characteristics,and development utilization of walnut kernels and its by-products.Walnut kernels,as the main edible part,are rich in fatty acids,proteins,carbohydrates,minerals,and vitamins,which can be used to develop products for anti-canc-er,weight loss,beauty,and more.By-products from walnut deep processing,such as diaphragma juglandis fructus,walnut green husk,and walnut leaves,contain various chemical components like juglone,polysaccharides,phenolic-s,which can be applied in developing insecticides,biomass carbons,antihypertensive drugs,among others.Fur-thermore,this paper lists several mature walnut products,such as walnut protein powder,diaphragma juglandis fruc-tus wine,and walnut oil capsules,to promote further development of China's walnut industry chain.
