Physicochemical properties of anthocyanin from the peels of Dioscorea oppostita
Objective To extract anthocyanin from the peels of Dioscorea oppostita(D.opposita)and determine its physicochemical properties.Methods Anthocyanin was extracted by acidic methanol and purified by macroporous resin column chromatography.The color changes and UV absorption spectra of anthocyanin at different pH values,the effect of temperature on the retention rate of anthocyanin,and the effect of metal ions on the stability of anthocyanin were all determined.Results The stability of anthocyanin from the peels of D.opposita was affected by pH obviously.With the increase of pH,the color of anthocyanin turned pale,and anthocyanin became unstable.Anthocyanin was more stable and easier to be stored at low temperature.Fe2+and Fe3+had great effect on the stability of anthocyanin,however,Cu2+,Ca2+,Zn2+and Mn2+had no significant effects on the stability of anthocyanins.Conclusion The stability of anthocyanin from the peels of D.opposita is affected by pH,temperature and metal ions to some extent.
