摘要
琼脂是一种提取于红藻的天然多糖,具有优良的胶凝性和凝胶稳定性,在食品、医药、生物工程等方面有广泛的应用。文中介绍了琼脂及其降解产物的应用现状。常规琼脂溶解所需温度较高,故低温溶解琼脂的制备对于实际生产有重大的意义,不仅节约了工业生产中溶解琼脂所消耗的能源,而且使温度敏感的物质及微生物与琼脂的共同应用成为可能。本文综述了低温溶解琼脂的制备进展,以促进琼脂的进一步开发和利用。
Abstract
Agar is a kind of natural polysaccharide extracted from red algae, with excellent gelation property and gel stability,so agar is widely used in food, medicine,bio- engineering,and so on. The application status of agar and its degradation products is reviewed in this article. Since agar needs higher temperature to dissolve,it have great significance to prepare agar with low-temperature solubility for practical output: not only saving energy needed to dissolve agar in industry production, but also making it possible to apply materials and microbe sensitive to temperature and agar at the same time. It is summarized that the progress of the preparation of agar with low-temperature solubility,aiming at promoting the further exploitation and application.
