Objective:To establish a method for determination of polysaccharides in health wine.Methods:The polysaccharides in health wine which was extracted by ethanol and dissolved by hot-water, was in ultraviolet spectrophotometry determination with phenol-sulfuric acid as chromogenicagent.Results:The linear range of the method was 0-0.15mg/mL,The linear regression equation and correlation coefficient was y=0.0034x+0.0021 and 0.9995, the recoveries were 96.2%-100.9%. Conclution:This method is suitable for detecting polysaccharides in health wine with the advantages of high recovery rate and easy operation.
