基于核酸适配体的牛奶中污染物检测技术的研究进展

近年来食品安全问题层出迭见,民众对牛奶及其制品的安全问题关注度日益提高.为了保障食品安全,保护人体健康,需要方便快捷的食品检测技术,定量检测出食品中的污染物.本文综述了色谱法、光谱法、电化学法等传统检测方法在食品污染物残留检测中的应用.在此基础上着重综述了基于核酸适配体技术的新检测技术在牛奶中多重污染物检测中的应用,包括对抗生素、重金属、黄曲霉毒素以及三聚氰胺残留等的检测,为之后开发多样便捷的核酸适配体技术提供参考.
Research progress of pollutant detection technology in milk based on nucleic acid aptamer
The food safety issues have emerged one after anotherin recent years and the public is increasingly concerned about the safety of milk and its products.In order to ensure food safety and protect human health,convenient and rapid food testing techniques are needed to quantitatively detect contaminants in food.This paper reviews the application of traditional detection methods such as chromatography,spectroscopy,and electrochemical methods in the detection of food contaminant residues.On this basis,the paper focuses on the new detection method based on nucleic acid aptamer technology for multiple contaminants in milk,including antibiotics,heavy metals,aflatoxins,and melamine residues,to provide a reference for the development of diverse and convenient nucleic acid aptamer technology in the future.
