PHYSICOCHEMICAL PROPERTIES AND APPLICATIONS OF NATURAL PIGMENTS
Our country is abundant in natural pigments resources,most of which are non-toxicity,soft color and healthful.Meanwhile,natural pigments which contain a lot of unsaturated double bonds are the excellent reactive oxygen quencher.The natural pigments can prevent and cure various diseases of human beings and will take place of the synthetic pigments which have toxicity and by-side effects.The present study was to summarize:1) The classifications of the natural pigments:a) isoprenoid pigments (fat soluble pigment),which composed of long chains of conjugated double bonds,such as lycopene,capsicum red pigment and zeaxanthin;b) the pyrrole derivatives,which based on porphine (consisting of four pyrrole rings),such as chlorophyll;c) the phenol,ketone and quinone pigments (alcohol-soluble and water-soluble),such as morning glory pigment;d) the indole pigment,such as red jujube pigment.2) The isolation and purification of the natural pigments.The main methods included:supercritical fluid extraction,microwave assisted extraction,molecular distillation,solvent extraction,enzymatic extraction and so on.3) The.physicochemical properties and application of natural pigments.The natural pigments were widely used in many fields,such as food industry,medical,dyeing,cosmetics and so on.Futhermore,the problems during research and the solution method,the trend of the development were also discussed in this study.
