摘要
纳米技术作为一个新兴的、快速发展的研究领域,在食品的加工、包装和检测等方面得到了广泛的应用.利用纳米载体对生物活性化合物进行营养递送是目前研究的热点,特别是利用蛋白质和多糖制备纳米颗粒的递送系统.对生物大分子多糖-蛋白质构建的纳米载体的研究现状、形成机理、影响因素以及在食品中的应用进行了综述.为今后多糖-蛋白质纳米载体在食品、生物及医药等领域的研究与应用提供参考.
Abstract
Nanotechnology,as an emerging and rapidly developing research field,has found wide applica-tions in food processing,packaging,and detection.The use of nano-carriers for the nutrient delivery of bioactive compounds is currently a hotspot,especially with respect to delivery systems utilizing proteins and polysaccharides to prepare nanoparticles.This paper reviews the research status,formation mechanism,in-fluencing factors,and the applications in food of nano-carriers constructed from the biological macromole-cules of polysaccharides and proteins.It provides a reference for research and applications of polysaccha-ride-protein nano-carriers in field such as food,biology,and medicine in the future.
